Yellow Mace
Yellow mace, derived from nutmegs, are quite valuable in that they are rarer to find than red mace and it is a unique yellow-colored mace unlike others which is highly sought after for its delicate and light flavor. It is derived from red mace, where the natural red mace is dried and turned into yellow color. It is popular in Asian cooking and used in both sweet and savoury dishes. It imparts a delicate flavor and a golden hue similar to that of saffron to the dish. With only slight differences than that of its counterpart, yellow mace is said to have lower levels of myristicin and higher levels of elemicin.
Mace is used often in spice blends such as in Allspice along with other spices such as cinnamon, nutmeg and cloves and in many other commercially manufactured spices such as masala mixes. It is used in a variety of desserts and baked goods such as custard pudding, pies, cakes, cupcakes and other seasonal baking items which requires a deep flavor. The spice can also be used in a variety of savory dishes such as soups, to flavor vegetables, in pickling and preserving, in biryanis and more.
Yellow mace, due to its sweet and light aroma, can be used in the cosmetics and personal care industry. Its oils are often an ingredient in soaps, perfumes and others. Due to its healing properties, it is also used in massaging oils and balms.
