Red Mace (Myristica fragrans) is the net-like aril that cocoons the nutmeg stone with its hard shell. Mace, the web-like lacing cover with a bright red, is removed from the nutmeg shell.  It exudes a milder flavor than nutmeg thereby gently uplifting the quality of a dish, making it popular amongst culinary chefs. It is rich in essential oils and vitamins A and B. Used in Sri Lankan indigenous medicine, it is abundant in antioxidants and iron, making it a very valuable spice!

 

Red Mace which has a sweet and strong smell that of nutmeg, is sharper and aromatic than nutmeg. A little mace adds a lot of flavors so the amount you add is very important! The health benefits of mace are that it improves digestive health, reducing inflammation and fatigue and it also contains antioxidant properties with many other health perks. It tastes great in pumpkin, sweet potatoes, and in stuffing and light-colored baked goods such as pastries.  Mace is used to flavor baked goods such as cakes, doughnuts, tarts, cookies, and others. It is used to flavor desserts such as custard puddings, ice-creams, cream sauces, casseroles, pies, and in savory dishes such as soups, stews, curries, savory sauces, and pickles.  Mace is also used in jellies and jams as well in condiments. It is used along with other spices such as cinnamon, nutmeg, cloves in spice blends. It is also used in teas and other beverages. Some mace will add a great flavor to chocolate drinks and it’s also used as an alternative to black pepper in some dishes.

 

Due to its healing properties, it is also used in the pharmaceutical industry in treating wounds such as mouth wounds and oral bacteria.

जावित्री (Myristicafragrans) एक जालीदार बीजचोल है जो इसके सख्त कवच के अन्दर जायफल की गुठली को घेरे होता है। यह जायफल की तुलना में एक मंद स्वाद देता है जिससे पकवान का स्वाद मृदुता के साथ थोड़ा बढ़ जाता है, जिसकी वजह से यह पाक रसोइयों में लोकप्रिय हुआ है। यह गंध तेलों और विटामिन ए और बी से भरपूर होता है। श्रीलंका की स्वदेशी दवाओं में इसका इस्तेमाल किया जाता है, इसमें प्रचुर मात्रा में एंटीऑक्सिडेंट और आयरन हैं, जो इसे एक बहुत ही कीमती मसाला बनाता है!
